A culinary installation featuring a super-complicated sandwich.

Toronto chefs Chris McDonald and Doug Penfold are channeling the Danes for a culinary installation at Cava. The theme, inspired by classical Scandinavian traditions but using Canadian ingredients, is smørrebrød – a classic Danish open-faced sandwich, which Cava says takes familiar ingredients and transforms them into something more complex. The process of making it starts 36 hours before it’s presented, which is about 35 hours and 57 minutes longer than it takes us to make our favourite: peanut butter and jelly.
